We've seen triple-deckers, which consist of peanut butter, sliced peaches, and maple syrup. Come to think of it, PB and maple syrup on any bread is great. A vast array of fruit will work in a PB sandwich-- pear, grapes, apple, mango, pineapple, cherries, you name it. Dried fruit works as well, especially figs and dates.
Then, there's the Ultimate Elvis Peanut Butter Sandwich:
Carefully fry bacon in a large flat pan. Add butter while frying to insure there¹s enough fat to completely crisp the bacon without burning. Remove the bacon. Fry white bread in the bacon fat-butter mixture over medium heat (not burning the butter). Get both slices of bread lightly crisp on both sides, remove the bread, remove the pan from heat. For each sandwich, spread peanut butter on two slices of the fried bread. Place crisp bacon, sliced banana and a drizzle of honey on one, cover with the other. Return the sandwich to the pan over a medium heat, let warm slightly, turn over, and warm slightly. Remove the pan from heat. Remove sandwich to cutting board, cut sandwich in quarters, sprinkle with powered sugar. Serve on a large plate and a big cloth napkin. Be prepared to make another one.
